Ms T and I have been making regular trips between St Louis and Chicagoland to enjoy Jazz Showcase in South Loop. We are always looking for some place to stop for lunch. We have made two stops at Cancun in Sherman recently. I have driven by the signs on I-55, what seems like a thousand times.
Cancun is a pretty gringo place. None of our servers have ever been Mexican. The food we have had follows that theme, although admittedly we have not done anything but a light lunch.
Their salsa with chips is acceptable, a pureed style, with a lot of garlic. It always helps us when it is not full of chunks of onion. For these meals, Ms T always orders a ground beef tostada. She found them to be acceptable, with minimal seasoning in the beef. I have ordered Huevos Rancheros both times. They are also acceptable, with a similar (or same) garlicky tomato sauce.
The last time, I tried to get some huevos con chorizo, but was told that the only egg dish they did was the ranch-style. I found that odd. Maybe they don't have chorizo, but this is absolutely the first Mexican restaurant I have been in anywhere that would not make this for me, whether on the menu or not.
I think we will we will probably stop here again, regardless, when timing is right. It is on the low end of the typical family style Mexican places we have been but is a better option than all the chain food along I-55 and in Springfield. I still have not figured out a good way to get back on I-55 northbound from this exit. Maybe it is a temporary construction thing. Thank God for GPS. -

I'm really unsure what rating to give Cancun. The last time we visited was over 3 years ago when I wrote my last update. Craving Mexican one night and not wanting to drive far, we decided to give Cancun another try.
First visit back was fantastic! 5 stars! Everyone was friendly, service was fantastic, restaurant was spotlessly clean, tea was great, and food was wonderful! No complaints. We were so happy to enjoy Cancun again we decided to go again, a week later.
A week later: Completely different experience: 2 stars at *best.* Restaurant was still clean, food was decent although swimming enchilada sauce and overpriced. Our waitress was one of the worst waitresses we have ever had. Completely inattentive, never smiled or acted friendly. Had to ask other people to get things for us because she disappeared. Tea was horrible! It was pale yellow and tasted like water! No one in the restaurant acted friendly, all seemed miserable. It's startling to me that a restaurant could be so drastically hit or miss. Yikes! Probably be another few years until we are back again! -

Have been eating here since they opened many years ago and always loved it until recently. I am confused as to what has happened to our little place and hope this is just a bump in the road. Their prices have increased and the quality.... I still voted for them in the best of SRJ and hope they will get their act together before it's to late.

The atmosphere is terrible, the food is overpriced and I could make better Mexican food at home.

Menu had been re worked a little. Prices aren't too bad. Service can be spotty as they're always losing servers and hostesses. Would recommend the the fajita nachos. Tuesday's are half price margaritas.
